These delicious muffins have become our new favorite, quick, and nutritious breakfast. And the other great thing is, it's not a precise recipe.
They can be made the night before and put in the refrigerator ready to pop in the oven.
Make as little or as much as you need by cracking eggs in a bowl, mixing in tomatoes, peppers, salt and pepper, and we have used sausage or ham for meat. (If you want to spice it up a bit, add some tobasco sauce) To stretch the muffins we also added leftover grits. Stir everything really well then pour the mixture into a muffin tin, filling each one half full and bake for 30 minutes or until the eggs are cooked.
Accompany with a cup of coffee. :) The perfect, quick breakfast.
