Grab N' Go Breakfast Muffins

These delicious muffins have become our new favorite, quick, and nutritious breakfast. And the other great thing is, it's not a precise recipe.

They can be made the night before and put in the refrigerator ready to pop in the oven.

Make as little or as much as you need by cracking eggs in a bowl, mixing in tomatoes, peppers, salt and pepper, and we have used sausage or ham for meat. (If you want to spice it up a bit, add some tobasco sauce) To stretch the muffins we also added leftover grits. Stir everything really well then pour the mixture into a muffin tin, filling each one half full and bake for 30 minutes or until the eggs are cooked.

Accompany with a cup of coffee. :) The perfect, quick breakfast.

Kentucky Derby Pie (Makes You Wanna Say "Yeehaw"!)

Thought I'd share the easiest and best southern pie recipe. It's also perfect for having guests over because prep and cook time are minimal and super easy.

  • 1 cup semi-sweet chocolate chips (preferably a heaping cup :)
  • 1 cup English Pecans or Walnuts
  • 2 eggs, beaten
  • 1 cup sugar
  • 1 stick butter, melted and cooled
  • 1/2 cup flour (all-purpose or Whole wheat)
  • 1 tsp. vanilla
Mix together (by hand or mixer) butter, sugar, vanilla, and eggs first until smooth. Then add flour and nut choice and chocolate chips.

Bake at 350 for thirty minutes. After it cools, drizzle melted semi-sweet chocolate on top. (It drizzles better if you put paraffin in with the chocolate) Serve, practice good southern manners, and leave the pie plate clean.

This hard to beat recipe has been a tradition associated with the Kentucky Derby Horse Race for quite a while.

WARNING! It is detrimental to you existence to have one gallon of milk available to accompany this essential food item.

(BTW I just one second place with this in a pie contest!)

Creamy Peanut Butter Pie!

This is one of my family's favorites!

NOTE: Plan Ahead!---Needs to chill

Ingredients:
1 package of cream cheese softened
1/2 cup sugar
1/2 cup peanut butter
1/3 cup whipped topping
10 peanut butter cups
1 chocolate crumb crust (Nine Inches)

Directions:
In a small mixing bowl, beat the cream cheese, sugar & peanut butter until smooth. Fold in the cool whip. Coarsely chop 3/4 of the peanut butter cups: stir into cream cheese mixture and spoon into crust. The quarter remaining peanut butter cups arrange over the top of your pie.
Refrigerate for at least 4 hours before cutting. Drizzle some chocolate syrup over it if you want even more chocolate! Enjoy.
